Keto Roast Pork Medallions
1 Pound - Pork Tenderloin - Sliced 2" Thick
3 Medium - Shallots - Minced
2 Cloves - Garlic - Minced
1 Tablespoon - Pepper - Fresh Cracked
1/4 Cup - Extra Virgin Olive Oil
Blend all prepared aromatics*.
Heat oil in skillet over medium-high heat.
Coat each slice of pork with aromatic mixture.
Cook until meat thermometer reads 145°
Serve with steamed broccoli, spinach salad or other green vegetables.
*AROMATICS: Old French from the Latin 'aromaticus'; a substance or plant emitting a pleasant or distinctive smell; cooking ingredients such as garlic, shallots, onions, ramps, etc.
Elephant's Fury Cocktail
1/4 Cup - Tumeric Root - Roughly Chopped
1 Cup - Water - Divided
3/4 Cup - Sugar - Castor (if you find it) Granulated
2 - Chilies - Dried
1 Cup - Lime Juice - Fresh Squeezed - Divided
1 oz. - Mezcal
1 oz. - Tequila
Salt & Chili Powder Mixed For Rim
Lime Wheels For Garnish
Puree tumeric and 1/4 cup of water.
Combine puree, sugar and remaining water.
Heat in saucepan until sugar dissolves.
Let steep 2 hours.
Pour through strainer into storage recepticle.
Puree chilies with 1/4 cup of lime juice.
Blend tumeric, chilies and 3/4 cup of lime juice.
Chill 1 hour.
Pour mezcal, tequila and 1 oz. of mix into a shaker with ice. Shake well and pour into a Nick & Nora glass that has been rimmed with salt & chili powder, garnish with lime wheel. Drink & Enjoy!
